Why These Rolls Work Without Raw Fish

- Tempura frying — the Chimichanga, Las Vegas, Sanchez, and Crunchy rolls are tempura battered and fried, creating texture and richness that rivals any raw-fish roll.
- Krab (imitation crab) — used in the California, Crunchy, Tootsie, and many specialty rolls. Fully cooked, mild, and widely liked.
- Smoked and baked fish — the Philly Roll uses smoked salmon (cured, not raw), and the Alaskan Roll uses baked salmon.
