The single most important quality indicator in sushi is fish freshness. Fresh fish has a clean, mild ocean smell — not "fishy." The texture should be firm but not tough, and it should glisten slightly. Any hint of ammonia smell, slimy texture, or dull coloring indicates fish that is past its prime.

Sushi Rice Quality
